Reverse Chicken Cordon Bleu (APO)

APO is short for Anova Precision Oven. It’s a multi purpose oven that sous vides/bakes and doubles as an airfryer and a convection oven. And it’s the only way I cook chicken breasts because they come out perfect every time with no work or worry from me!

For this recipe, i pounded out 3 organic chicken breasts and SV’d them until done. (the app does all the work for me) Then I removed them and let them cool a bit so I could roll them. Filled them with a little shredded jarlsberg, emmental or gruyere cheese (or a combination of what you like) & chopped black forest ham - not a lot. then rolled them up in a thin slice of black forest ham, seam side down so the rolls don’t reopen. topped with a bit more of the shredded cheese.

Popped them back under the heating element (or a broiler) until the cheese was melted and the ham’s edges were browned. Served over Yukon Mashed Potatoes. Delish!

NOTE: If you don’t have an APO, no worries. Use a sauté pan and add a little oil or butter. Add the pounded out chicken breasts without overcrowding. Cook through, or just about through, but not over done! Then let them cool so you can touch them. Add the cheese & ham, roll them up, and continue until they are all assembled. Pop them under the broiler (NOT TOO CLOSE) put the rack down a level. Watch the cheese get melty and bubbly. Serve hot. Season to taste. Colorful veggies or a salad make it a beautiful dish.
