Golden Chicken (in a crockpot)

Golden Chicken is elevated comfort food. The sauce, the melt in your mouth chicken, the ease! This is good enough for company, too! So get out your crockpot and let it do the work. You’ll come home to a delicious, savory, satisfying, pretty healthy dinner, served with a green salad, a fresh colorful veggie, and it’s gluten free if you do NOT serve it over noodles. :) Rice works well! Anything to soak up all that sauce!

Ingredients:

  • organic chicken breasts. cut in half, and put in crock pot.  

  • add an 8oz package of sliced mushrooms - any variety (portabella, cremini, white)

  • melted 1/4 cup butter, (1/2 stick)

  • 1 packet of Good Seasons or another brand of dry Italian Salad Dressing mix

  • 1 can of MUSHROOM SOUP (Campbell’s golden mushroom or a can of organic cream of mushroom soup)

  • 1/2 cup of white wine (or chicken broth/stock)

  • 1/2 of an 8-oz container of CHIVES & ONION CREAM CHEESE. (4 oz)

Instructions:

In a small saucepan, melt the butter, stir in the other remaining ingredients. Once this is all melty and smooth, pour this mixture over the mushrooms and chicken breasts in the crockpot.  

Cover and cook on low-heat setting for 5-7 hours. (they are done around hour 5… will keep til 8)

That's it.  Serve with something colorful:  steamed green beans, sugar snapped peas or asparagus, sliced tomatoes, etc. and you have a colorful, healthy, low-carb dinner. 

of course, if you want the carbs:  serve over egg noodles, rice or pasta, or with potatoes !!  baked or mashed!  you want to absorb ALL the creamy golden sauce! Made with love.
