Tropical Piña Colada Oatmeal (IP)

my husband loves steel cut oatmeal. he’d eat it every single morning if he could. luckily i love all recipes i can make in my instant pot! so i make a lotta oatmeal!

but how much banana maple walnut or apple cinnamon spiced oatmeal can i make!? it seems boring after a while. so when i asked for another fruit he likes, the answer was pineapple. 😳 this is what he got!

Ingredients:

  • 2 cups organic steel cut oats

  • 2.5 cups unsweetened coconut milk

  • 1/2 cup water

  • 1/2 cup pineapple juice (or 1/2 can defrosted apple juice concentrate)

  • 2 tsp vanilla extract

  • healthy pinch of salt (don’t skip this)

  • 1/4 cup of unsweetened dark sweet cherries (trader joe has these)

  • 1/2 crushed pineapple (don’t drain it)

  • 1/2 cup unsweetened shredded coconut

  • 1/3 cup chopped macadamia nuts (dry roasted & salted)

  • sprinkle 1/8 organic ground flax seed*

    *(i add this to all the oatmeals i make. it’s good for you and it doesn’t change the taste.)

Instructions:

in a 6 quart instant pot, add the oats, coconut milk, pineapple juice, water, pineapple juice (or apple juice) & salt. give it a good stir.

lock the lid, set to seal, press porridge button for 12 minutes on high pressure.

after the 12 minutes, let it natural release for 10 minutes or more - it won’t ruin it. then quick release so the steam can escape/pin drops before opening the lid. (put a towel over it so the steam doesn’t burn you!)

it will be thick with a layer of liquid on top, stir carefully - it’s super hot. then add the remaining ingredients.

Note:: the measurements for the fruits, nuts, etc., are guidelines.. add more or less depending on your flavor palette.
